Hold on to your knickers, loves! Giraffes Can Bake has a healthy recipe for you! Whaaaa?! Don’t worry, this is still your best source for indulgent desserts, but whilst buttery cakes and boozy cocktails may be my forte, even I need a healthy dose of vitamins every now in then! In fact, despite all the delicious treats I make and share with you, I actually try and eat quite healthily in my day to day life. I certainly don’t deny myself indulgent, tasty treats like the ones I share here (I mean, somebody has to taste test the recipes!) – I’m big believer in everything in moderation. So I’ll try to eat healthy and nutritious meals for breakfast, lunch, and dinner, and then treat myself to a glass of wine and a slice or two of cake in the evenings. Sometimes, the indulgent side of the scale will heavily outweigh the healthy side, but I’m okay with that!

This citrus smoothie is a really great way to start the day off right though, and it’s so tasty you won’t miss that sticky cinnamon bun (or maybe you could have that too, that’s what they mean by “balance”, right?!). I’m not going to pretend to be some kind of expert on nutrition, and this citrus smoothie probably isn’t going make you look younger or cure cancer or whatever these juice cleanses claim to do, but it is full of a lot of good things. It has protein from Greek yogurt, potassium from bananas, vitamins from all the citrus, and healthy fats from the avocado – there’s also no added sugar in this citrus smoothie! I think we can all agree you can feel good about drinking it!

I will be getting back to my indulgent, sugar and calorie laden desserts and treats very soon, don’t worry. But since it is the start of the year, I thought it appropriate to not completely tempt you away from any resolutions you may have made about eating healthier or cutting down on sugar straight away! I don’t personally make new year’s resolutions, but after a very indulgent Christmas I am back to eating healthier and not just surviving on peanuts, chocolate, and alcohol. This citrus smoothie was a great way to get me back on track, because it’s creamy and delicious it didn’t make me feel like I was depriving myself – which is what healthy eating should be all about, otherwise you just end up miserable!

This citrus smoothie was made to be drunk alongside breakfast, as all that citrus really gives it a great zing to wake you up! That’s why it’s called Mornin’ Sunshine Citrus Smoothie. To make it a complete breakfast, you could even add some of your favourite protein powder to bring the protein level up (while this citrus smoothie contains a decent amount of protein, I think you probably need quite a bit more to make it a proper meal replacement!).  This citrus smoothie can also be a great, healthy snack too however. My go-to unhealthy snack at work is a hot chocolate with whipped cream from a certain coffee chain that has the audacity to have a franchise in the hospital where I work, making it so hard for me to resist when the chocolate cravings hit at 11am! But I will now be keeping a bottle of this yummy citrus smoothie in the fridge at work, for a sweet snack to keep me going until lunch time – it has the added benefit of no sugar crash before lunch time too! That’s not to say I won’t occasionally still treat myself to a yummy hot chocolate, like I said – it’s all about moderation over here!

Mornin’ Sunshine Citrus Smoothie

Yield 2 servings

A delicious citrus smoothie with a creamy green smoothie layer, full of vitamins and protein

Ingredients

For the pink layer:

  • 3/4 cup (75g) chopped watermelon 
  • 2 clementines, peeled
  • 1 large banana
  • 1/3 cup (40g) frozen raspberries
  • 1 cup (200g) fat free greek yogurt
  • 3 tbsp (45ml) lemon juice (approx 1 lemon)
  • 2 tbsp (30ml) lime juice (approx 1 lime)

For the green layer:

  • 1 medium avocado, peeled and stone removed
  • 1 tbsp (15ml) lemon juice
  • 1 clementine, peeled
  • 1/2 large banana
  • 1/2 cup (100g) fat free greek yogurt
  • 1/2 cup (120ml) water

Instructions

To make the pink layer:

  1. Put all the ingredients in a blender, and blend until smooth. Pour into glasses. 

To make the green layer:

  1. Put all the ingredients in a blender, and blend until smooth. Spoon on top of the pink layer.

Notes

Swap the greek yogurt for a dairy free alternative if required
